  • Coriander seeds: 1 tsp (small piece)
  • Ginger or galangal, sliced
  • Chicken or fish stock: 850ml
  • Thin rice noodles: 175g
  • Fish sauce: 2 tbsp
  • Fat red chilies, deseeded and thinly sliced: 2
  • Garlic cloves, thinly sliced: 3
  • Raw, tail-on tiger prawns: 300g
  • Skinless salmon fillet, cut into small cubes: 200g/7oz
  • Spring onions: 4, chopped
  • Coriander leaves: a handful
  • Mint: handful
  • Lemon juice: 2

To start with this recipe, you need to heat a saucepan and then add the coriander seeds along with the ginger. Now, add the sauce and let it boil for some time and then simmer for another ten minutes. After the soup is boiled, keep it aside and prepare for the next ingredients. You need to cook the noodles as per the direction in the packet and drain the water so that it becomes dry. Now, add the noodles in the fish saucepan and also add chilies and garlic one by one.

Then, you need to simmer it for at least three to five minutes or as per your preference. After this step, it is time to add the prawns and salmon into this recipe. After you have added the prawns and salmon, you need to simmer it again for at least five to ten minutes or until everything is cooked.
