Recipes For Delicious Vegetarian Dinner

Double Bean And Roasted Pepper Chili

The dish is low fat and healthy meal,  filled with vegetables. It has a great flavor and served with yogurt and tabasco sauce. The total time requires to prepare the dish is one hour fifteen minutes. 

Ingredients Required To Prepare The Dish

Two finely chopped onions

Two finely chopped celery sticks

Two tablespoon rapeseed oil

Two chopped orange or yellow pepper

Two jars of roasted red pepper (460grams each)

Two tablespoons red wine vinegar

Two teaspoons Chipotle paste

One tablespoon dried oregano, cocoa powder, and smoked paprika

Two tablespoons of cumin powder

One teaspoon of cinnamon powder

800grams of chopped tomatoes

400grams of refried beans

Three cans of kidney beans (strain and rinse the water)

Two boxes of black beans (strain and clean the water)

Step By Step Method

Firstly,  take a large saucepan and fry the onions, chopped pepper, celery in hot oil over low heat. Fry the vegetables until it turns soft and loses the colors.

Secondly, take the jar of peppers and drain it into another bowl. Add a few peppers in a processor along with cocoa,  vinegar, herbs, dried spices, and Chipotle paste. Stir until it softens and cooks in low flame for a few minutes.

After that add the refried beans and tomatoes with one can of water and pepper juice. Stir the dish for a minute until it gets thick and smoky.

Finally, cold and chill the sauce. Or else you can add the black beans and kidney beans with roasted peppers and reheat. Once the dish starts bubbling, serve the beans.

Enchilada Pie

The dish is an excellent choice if you want to treat yourself with some fantastic flavors. Enchiladas are a famous dish worldwide. They are easy to make and high with nutrient-rich vegetables. It takes five minutes to prepare the meal and thirty minutes to cook and serve.

Ingredients Required To Prepare The Dish

One tablespoon of rapeseed oil or vegetable oil

Two sliced pepper of any color

One red onion sliced

400grams of drained mixed beans

Chopped coriander

Four corn tortillas

100grams of low fat soured cream

30grams of grated cheddar

Step By Step Method

Firstly, take a pan and add oil to it. Heat the oil and fry the onions and peppers for ten minutes until it becomes soft and discolors. Then add the chopped tomatoes, beans, spice mix, and some of the seasonings. One it begins to bubble,  keep it for five minutes until the vegetables are mashed. Then add the coriander and stir the dish. After that,   heat the tortillas for thirty seconds in the microwave.

Secondly, spread some of the pepper and onion mixes on the ovenproof dish. Add the soured cream and warm tortilla above the mix. Now repeat the layer thrice. Finally, add the soured cream above the recipe. Sprinkle the cheddar cheese and grill it for five minutes until it turns brown — season with some chopped coriander. The dish is ready to serve.
