Spicy Bun Bo Hue: Feel The Bliss

When you are in search of a wholesome soup with noodles, beef, pork, varieties of seasonings and herbs, look no further than this traditional soup from Vietnam. A bowl of hot Bun Bo Hue will not only make your tummy full but also give you the kick of flavors in your mouth.

Though the preparation takes time and patience, the outcome is worth it.

Traditional Bun Bo Hue Recipe

Preparation time – 20 minutes

Cooking time – 3 hours


  • Pork hocks – 2 pounds
  • Rice noodles – 1 packet, dried
  • Horsetails – 2 pounds
  • Oxtail – 2 pounds
  • Pork sausage in hue style – 1 pound

For Seasoning And Broth

  • Onions – 2
  • Chicken stock – 24 ounces
  • Lemongrass – 10
  • Sugar – 2 tbsp
  • Salt – to taste
  • Fish sauce – 4 tbsp
  • MSG – 2 tsp
  • Shrimp paste – 2 tbsp
  • Water – as required
  • Annatto seeds – 2 tbsp
  • Garlic – 2 tbsp
  • Oil – 3 tbsp
  • Shallot – 2 tbsp

Required Herbs

  • Mint – a handful
  • Basil – a handful
  • Jalapeno – a few
  • Lime – 1
  • Bean sprouts – a handful

For The Banana Flowers

  • Banana flower – 1
  • Water – 2 cups
  • Lime juice – 1

Directions For Bun Bo Hue

First Make The Broth

  • Wash all the meat thoroughly and add in a pot of water. Put the pot on high heat and as boiling starts, remove it and get rid of the excess water. Wash all the meat again under running water.
  • Transfer the meats in the pot and add the lemongrass, chicken stock, and onions. Fill the pot with water till the brim and put it on high flame. As the stock starts to boil, reduce the heat and let it cook for almost 3 hours on low flame so that all the meats are cooked to perfection.
  • Take the meats out of the broth and keep them in a separate bowl. Add salt, sugar, shrimp paste, fish sauce as well as MSG to the broth and give it a good mix. If needed, you can pour more water and let it boil for a few minutes more.

Prepare The Noodles

In another bowl of water, add the noodles and let it cook on high flame for 2-3 minutes until the noodles are soft. When done, remove the water and put the noodles into the pot of broth.

Making The Red Spicy Coloring

Put a skillet on high heat and add the oil. As the oil becomes hot, add the annatto seeds. As soon as the seeds will leave their red color, remove them from the skillet.

Now add the chopped shallots and minced garlic. Let them fry for a few minutes. Transfer these seasonings into the pot of broth and mix very well.

Now Making The Banana Flowers

Chop the flowers; do not add the little fronds. Add them in a bowl of water along with lime juice. Let it boil for half an hour till they are soft. Now add these soft flowers into the pot of broth.

Thus, your spicy Vietnamese noodle soup with pork and beef is ready. Garnish with mint, basil, bean sprouts and jalapeno. You can add a dash of lime from the top to give it a tangy punch.
