Easy To Make Rau Muong

Preparation time – 15 minutes

Cooking time – 10 minutes

Ingredients

  • Water spinach – 200 gm, chopped
  • Oil – 1 tbsp
  • Toasted sesame seeds – ½ tsp
  • Salt – to taste
  • Garlic – 1 clove, minced
  • Ginger – 1 tbsp, julienned
  • Sugar – 2 tsp
  • Fermented bean curd – 1 tbsp

Directions

  • Take a wok and add oil in it. Put it on high heat and as the oil becomes hot, add the ginger and garlic. Sauté them for 1-2 minutes. As you get a nice aroma, add the water spinach and let them cook till they are soft.
  • Now add the sugar, salt and bean curd and mix with the spinach. Stir them for a few minutes and transfer onto a serving plate. Sprinkle the toasted sesame seeds on the top and serve with jasmine rice.

For Marinating Beef

  • Beef sirloin – 1 pound (cut into thin slices)
  • Salt – to taste
  • Black pepper – to taste
  • Stock powder – 2 tbsp (you can use stock powder of chicken or pork or mushroom)
  • Granulated sugar – 1 tsp
  • Garlic – 4 cloves, minced

For Making The Water Spinach

  • Water spinach – 3 pounds
  • Salt – to taste
  • Vegetable oil – 4 tbsp
  • Oyster sauce – 3 tbsp
  • Sugar – 3 tsp
  • Garlic – 6 cloves, minced

Directions For Making Rau Muong

  • First marinated the beef slices with salt, minced garlic, sugar, black pepper and stock powder in a bowl and keep it aside for around half an hour.
  • Now place a pot of water on high heat and add salt in it. As the water starts to boil, add the chopped water spinach and let it cook till soft. As soon as it is done, transfer it to the bowl of ice so that the lovely green color and softness, remains the same.  
  • Put a wok on high heat and add some oil. Once the oil is hot, add some of the minced garlic. When you get a nice aroma, put the marinated beef in it and let them cook till the beef is cooked to perfection.
  • In a skillet, heat remaining oil and add the leftover garlic. When the garlic becomes brownish, add the water spinach and let it cook for a few minutes.
  • Next, add the cooked beef into the water spinach and mix them properly. Add the oyster sauce and sugar and mix well so that all the beef and water spinach are coated with the sauce.
  • Your tasty water spinach is done. Have it with plain hot rice to feel the bliss.
